How to Make Homemade Vanilla Ice-cream

Recipe
- 7 egg yolks
- 2 Cups Heavy Cream
- 2 Cups Whole Milk
- 1 to 1.5 Cups Sugar (to your liking)
- 2 teaspoons Vanilla Extract
Directions
Making homemade ice-cream is quite simple once you understand the baiscs.
1. Begin by placing the egg yolks in a bowl with the sugar and whisking them until the color becomes a pastal yellow.
2. Place the heavy cream and milk into the boiler and bring the liquid to a simmer.
a. Don’t bring the milk to a simmer to quickly, because it will burn on the bottom and burnt ice-cream isn’t that great.
b. Also try to watch it when it starts to get hot. Milk tends to foam over the sides of the pot rather than boil. Keep a close eye on it, burt milk solids on the stove are a hassle and stink.
3. Drizzle the hot milk into the egg yolk mixture slowly as you whisk. This is to ensure the eggs don’t cook due to the high heat and is also known as tempering.
Midway Cooking Tip:
Place a wet hand towel in a circular pattern on the counter and place the mixing bowl on top. This will allow you to drizzle the milk into the bowl while whisking. Unless you have three hands, the bowl will move around as you work and this will definitely ensure a mess in the kitchen. Avoid the mess and utilize this tip.

4.Transfer the milk and egg mixture back to the boiler and over medium heat, cook until the consistancy is slightly thick. Be sure to constantly move the mixture, you don’t want milky sweet egg drop soup.
a.You can test this by pulling the spatula out of the mixture and running your finger across it, if the line holds then it’s ready.
5.Add in the vanilla and cool instantly in an ice bath. If it stays hot for long the eggs may begin to harden and ruin the product.
6.Place this cool mixture in the ice-cream maker and enjoy.
